
Campfire Biscuits
The perfect companion to a mug of milk and adventure planning, a snack on the trail, or as a campfire treat..
As promised my gluten free Campfire Biscuit Recipe is below..

The Ingredients
1/3 Cup (80g) of sugar
1/2 Cup (120g) of butter/marg
2 Cups (200g) of gluten free oats
1 Cup (150g) gluten-free self-raising flour
1 Teaspoon of baking powder (omit this if using regular self-raising flour)
1 Egg
Milk ~ (As required) I use approx half a cup and add more as needed.
Additional Extras ~ Crushed almonds, Banana, Choc Drops, Vanilla Essence, Walnuts, Honey etc

The Oven Method
Mix the butter/marg and sugar until light and creamy
Add the oats and blend well
Add the flour and baking powder (I use a sieve) and mix together
Add the egg and start mixing in, adding milk until you get a nice pliable dough (I go with quite a sticky mix for a softer biscuit)
Add any additional extras ~ I like to mix in crushed almonds, a diced banana and sometimes walnuts, honey or milk chocolate drops..
Now grab golf ball size lumps of dough (or bigger if you prefer), roll in to a ball, squish to a flat biscuit shape (to your preferred size) and lay on a greased baking tray.
Pop in a pre-heated oven ~ I set my oven to 150° ~ and cook for 25 mins or until lightly golden.
Once cooled I add a sprinkle of icing sugar, and enjoy with a smooth cup of HyggeandWyld Coffee or a nice cold mug of milk..
The Campfire Method
Follow the Oven Method above, but add a little less milk to give a nice pliable dough.
Take a handful and roll in to a long, thick sausage shape, flatten slightly.
Then wrap around your skewer (I whittle the bark off a green stick/twig, wet it a little, then roll my dough on to it.. squeezing a little to secure it)
Now hold over your fire, turning regularly until cooked through (practice makes perfect)
Once cooked carefully slide the biscuit off the stick.. and add any extras.. maybe a sprinkle of icing sugar, marshmallows or melted chocolate.. enjoy!
